How we create unique products

MACHINERY USED AND PATENTED PRODUCTION PROCESS

The patented machinery used in the creation of PizzaMI gluten-free dough simulates human action. This makes our dough and the production process that follows its preparation unique. The final product is composed of several high quality elements, including 11 different types of flour, starchy vegetable fibres, already gluten-free in nature and lactose-free. After years of experimentation and research, we have arrived at the final blend that makes PizzaMI a product of Italian excellence.

THE PLUSES OF OUR DOUGH. WHAT OTHERS DON’T HAVE.

The basis of all products. Our dough is suitable for coeliacs, vegans and anyone who wants to eat a product WITHOUT GLUTEN, WITHOUT lactose, WITHOUT GUM (NO XANTHAN, NO GUAR, NO CMC), LOW SUGAR CONTENT – SOURCE OF FIBRES. Savoury, fragrant and with an unmistakable edge, PizzaMI dough undergoes a long natural leavening process of 48 hours, at a controlled temperature, thus reducing the use of yeast and guaranteeing a soft dough with a low sugar content.

WHAT MAKES US DIFFERENT FROM EVERYTHING ELSE?

Micro-filtered seawater from the Mediterranean Sea for food processing is naturally rich in minerals such as calcium, potassium and magnesium. This allows us to reduce the addition of salt compared to a traditional dough.

Different types of flour, vegetable fibres and starches (naturally gluten-free and lactose-free).

The use of extra virgin olive oil: rich in useful substances for our organism such as Omega 3 and 6, vitamins E and K, minerals such as calcium and iron as well as having antioxidant properties and helping to reduce blood cholesterol.

48 hours of natural leavening: our specially developed and exclusively formulated yeasts, together with the long natural leavening process at a controlled temperature, make our products highly digestible.

LA MARGHERITA

Margherita PizzaMI is a gluten- and lactose-free pre-cooked frozen product, formulated for coeliacs and others. The long leavening process, sea water and the absence of gums such as guar and xanthan give it a high digestibility.

The product, also in BIO version with organic certificate and in VEGAN version, is available for the HORECA and RETAIL channels. Customised formats and fillings are available for Private Label.

TRADITIONAL PIZZA BASE

PIZZAMI pizza base is a pre-cooked frozen product specifically formulated for coeliacs and others. It is allergen-free and VEGAN. Available in 30 cm format for RETAIL in packaging with a strong appeal, which communicates the product’s pluses; or for the HO.RE.CA. channel in single flowpack with or without aluminium tray.

The product, also in BIO version with organic certificate and GOURMET format, is available for the HORECA and RETAIL channels. Customised formats and fillings are available for Private Label.

LA PINSA PIZZAMI

With PizzaMI, Italian gastronomic specialities are now also available gluten- and lactose-free.

The Pinsa Base, available for the HO.RE.CA. channel and for the Private Label market, a product based on the ancient focaccia but reworked a few years ago for the market, is the real trend of these years.
PizzaMI’s R&D department has succeeded in recreating the authentic pinsa for the gluten-free market.

The pluses of the Pinsa PizzaMI are definitely to be found in the special highly hydrated and hand-rolled dough, the use of extra virgin olive oil, and the 48-hour natural leavening time.
The dough is vegan, gum-free and allergen-free.

The PizzaMI brand Pinsa Margherita, available for the RETAIL channel, 24 hours of natural leavening using only Mother Dough as dough, is filled with 100% Italian tomatoes and lactose-free mozzarella, stretched by hand and finished with oregano.

Recipes (ingredients and topping for the filled version), customisable packaging and label, possibility of BIO production on request for private label projects.

THE MIXES

PASTA – PIZZA AND BREAD

PizzaMI mixes are the basis for all our products. Available for retail in small packs or in large formats for bakeries, delicatessens, pizzerias and restaurants.

The product, also in a BIO version with organic certificate, is available for the HORECA and RETAIL channels.

PIZZAS WITH TOPPING

LA DIAVOLA – LA FORMAGGI – LA PROSCIUTTO

PizzaMi’s stuffed pizzas are tasty and created to meet everyone’s needs: gluten-free, lactose-free and highly digestible thanks to the long leavening process and the ingredient sea water.

PizzaMi uses natural ingredients from the Italian culinary tradition for a chef’s pizza. Choose your favourite flavour from: La Formaggi (Cheese topping), La Prosciutto (Ham Topping), La Diavola (Pepperoni topping).

The products, also in BIO version with organic certificate, are available for HORECA and RETAIL channels. Customised formats and toppings are available for Private Label.

PIZZA DOUGH

PizzaMI frozen pizza dough is made of approximately 250 g dough balls, strictly with gluten-free ingredients. It is a top quality product for those who want to bake a real Italian pizza.

Everyone appreciates the lightness, digestibility and fragrance of this dough made from a mix of 11 different flours. The dough is lactose-free and suitable for a vegan diet.

The product, also in BIO version with organic certificate, is available for the HORECA and RETAIL channels.

LE FOCACCE – I PANINI

The ‘I Sofficissimi’ line offers two products representing the types of soft, fluffy and fragrant breads that PizzaMI offers.

The mini rolls are a novelty in the world of Gluten Free. Their mignon size and spherical shape make them practical. Designed for everyday use by families or restaurants.

The real round Italian focaccia is finally available on the market. Gluten-free and lactose-free. Tomato, rosemary and olives are the treasures of the Mediterranean, chosen to perfume PizzaMi focaccias.

Plant based pizza crusts are vegan, made with genuine and simple ingredients, and offer an incredible convenience for those who now prepare these types of bases at home from vegetables. These pizza crusts are also available with the Organic Certificate. The cauliflower crust provides a significant supply of antioxidants. Ideal for coeliacs, it is produced in a dedicated gluten-free plant.

The product is available for the HORECA and RETAIL channels.

ITALFREE deep-frozen pizza dough is made up of approximately 250 g loaves of gluten-free ingredients. A top quality product for those who want to bake a true Italian pizza.
