The patented machines used to create PizzaMI’s gluten-free dough simulate human action. This makes our dough unique as the production process that follows its preparation. The final product is composed of several high quality elements, including 11 types of different flours, starchy vegetable fibers, already gluten-free and lactose-free in nature. After years of experimentation and research we have created the definitive blend that makes the PizzaMI product an Italian excellence.
At the base of all the products. Our dough is suitable for celiacs, vegans and anyone who wants to eat a product GLUTEN-FREE, LACTOSE-FREE, WITHOUT GUMS (NO XANTHAN, NO GUAR, NO CMC), LOW IN SUGARS – SOURCE OF FIBERS. Tasty, fragrant and with an unmistakable crust (edge), the PizzaMI’s dough is subjected to a long natural leavening process of 48 hours, at controlled temperature, thus decreasing the use of yeasts and ensuring a soft and low sugar content dough.
The uniqueness of the products is enhanced by the use of two very fine and healthy ingredients, 100% Italian extra virgin olive oil and sea water. The oil is strictly produced in Italy from Italian olives. It’s rich in substances useful to our body: omega 3 and 6, vitamins E and K, minerals such as calcium and iron. Thanks to the sea water, in the dough there is half of salt normally present in a traditional pizza. Moreover it’s rich in mineral salts such as calcium, potassium and magnesium which make our products highly digestible.
PizzaMI’s Mixes are the basis of all our gluten-free products. Available in small packs or in large formats for bakers, delicatessens, pizzerias and restaurants.

The PIZZAMI pizza base is a precooked frozen product, specifically formulated for celiacs but not only. It is allergen-free and VEGAN. Available with diameter 30 cm for RETAIL channel in a packaging with a strong appeal, which communicates the benefits of the product; or for HORECA channel in single flowpack with or without aluminum tray.

The pinsa romana is a traditional Italian food created by the genius of the farmers of Lazio (a region in Italy’s heartland) in ancient time not so far from Rome.
Our Pinsa presents a unique taste thanks to our innovative production process and the top-quality ingredients we use (long natural leavening – 48H, extra-vergin olive oil, our special highly hydrated and hand finished dough).
